CHEF Gerardo Vázquez Lugo
Born and raised in Mexico City in a family of rich culinary traditions, Gerardo Vázquez Lugo is an architect by profession. Attracted by his love for cooking, in the early 90s, Gerardo abandoned his promising career in architecture to pursue his true passion: traditional Mexican cuisine.
Vázquez Lugo inherited his first family recipes, which are today some of his most renowned dishes. But his knowledge also comes from his culinary studies at the Institute of Culinary Culture and by working with chef Alicia Gironella and Giorgio D’Angeli.
Currently, Gerardo is Executive Chef at Nicos, a restaurant located in Clavería neighborhood in Mexico City that has been preserving Mexican family food for over 60 years, and has been listed in Latin America’s 50 Best Restaurants for four consecutive years since 2015.
Vázquez Lugo is a passionate advocate of sustainable processes: local sourcing and traditional styles of cooking. His work as a researcher led him to collaborate closely with traditional cooks and local producers, resulting in a menu that chronicles the country’s diverse regional flavors and cooking techniques with fresh seasonal products, thus, a cleaner and socially responsible kitchen.
During his over 20 year career, Gerardo Vázquez Lugo has managed to mix tradition, flavor, sophistication, quality and fair trade in each of his dishes, becoming a worldwide renowned figure of Mexican cuisine. Recently, Vázquez Lugo and his mother, María Elena Lugo Zermeño, received The Diners Club Lifetime Achievement Award 2018 for their joint contribution to Mexican cuisine.
